Now this might be the best Carrot Cake you will ever eat! I’ve never been a big fan of Carrot Cakes but my dad and boyfriend love them. So when I saw this Chai Spiced Carrot Cake on Jamie Oliver’s Website I knew I had to give it a go and it turns out I loved it too!
You need:
250 ml vegetable oil , 4 large carrots, 1 large lemon, 100 g pecans, 280 g plain flour, 2 teaspoons baking powder, 1 tablespoon ground ginger, 2 tablespoon ground cinnamon, 2 teaspoons ground cardamom, 1⁄4 teaspoon ground cloves, 1⁄4 teaspoon ground anise, 1⁄4 teaspoon ground nutmeg, 1 black tea bag, 2 large free-range eggs. 200 g caster sugar, 200 g light brown sugar
Grate the carrots and the lemon zest into a bowl. Take another bowl and combine the flour, baking powder, 1⁄2 a teaspoon of sea salt, and the spices. Add the leaves of the tea bag and set the bowl aside. Into your third bowl go the sugar, eggs and vegetable oil. Now you take the carrot mix and add it to your wet mix. Combine all together, then add the dry mix. Give it a good stir until you have a smooth and even mixture.
The cake mix goes into the oven for 50 min to an hour on 180 ° C.
Whilst the Chai Spiced Carrot Cake is in the oven you can go on wiping up the Cream Cheese Buttercream.
You need:
200 g soft unsalted butter, 200 g cream cheese, 15 g icing sugar
Beat the butter for about 5 min until it has a light colour. Add the icing sugar mix it up. At last mix in the cream cheese.
To sprinkel on top of your Cream Cheese Icing toss 30 g flaked coconut in a frying pan and toast them lightly.
By now your cake should be out of the oven. Let it cool down. Then what’s left to do is to scoop on the icing and sprinkle the coconuts flakes over the cake. And then what’s left to do is to enjoy this yummy cake.
Here it is the yummiest Carrot Cake you will ever eat. Well definitely from my perspective. The spices take this cake just to another level and made me like Carrot Cake again. It is well balanced and the blend of spices give it just the right warmth to it.
