How about some fresh lemon cupcakes? Does this sound great to you? Then you’re at the right place. This is my own recipe and in just under an hour you’ll be having your own fresh lemon cupcakes with a fancy butter cream icing. Ready to be shared with your friends and family or just eat them all yourself.
My Lemon Cupcakes
You need: 300 g unsalted butter, 150 g caster sugar, 3 eggs, 150 g flour, 1 tsp baking powder, 2 1/2 lemons, 300 g icing sugar & green colouring paste.
This is such an easy and quick recipe, like seriously. Whip up 150 g soft, unsalted butter with 150 g of sugar. Then add 3 eggs, mix it all together until you have a fluffy cupcakes mix. Fold in 150 g of flour and 1 tsp of baking powder. What’s left to do is adding the peel of two lemons and their juice. Bake those cupcakes at 180° C for 20 min or until they are golden.
How to do two coloured butter cream icing
Now on to the butter cream icing. Whip up 150 g soft, unsalted butter. Mix it until the butter has a light colour, nearly white. Then gradually mix in 300 g of icing sugar. Once all the icing sugar is incorporated add the peel of half a lemon and 1 tbsp of lemon juice. Whip the mixture until it has a stiff and airy consistency. If you wanna just pipe the white butter cream icing onto your cupcakes (which now should be out the oven) – go for it. I wanted to jass my lemon cupcakes up by doing a two coloured icing. This means by dividing the mix and adding some edible green colouring to half the icing, I can create a two coloured swirl!
Now to the tricky part. Try to fill the lower half of the piping bag with the white butter cream icing. I use small spoons to do this. Than gently, really gently layer the green icing on top. It doesn’t matter if it doesn’t come out perfect just try to not mix the two icing to much together.
It should look something like that. Wait until your cupcakes have cooled down, unless you want your butter cream icing to melt all over your lemon cupcakes. Ice your cupcakes and you’re done – yay!

How unusual to put green on a lemon cupcake ! What gave you that idea? I would have been boring and used yellow 🙂

Meine Liebe klar darfst du das fragen! Ich habe mir auf Ebay eine Rolle mit dieser Marmorfolie bestellt. Leider weiss ich nicht mehr von wo genau. Dann kannst du sie auf eine Unterlage kleben oder wie ich einfach immer wieder ausrollen wenn du sie brauchst :).
