When life gives you lemons… make a cheese cake! I made this yummy lemon cheese cake some weeks ago and thought it would be a shame not to share it with you guys.
So as always the ingredients. You need:
300 g chocolate biscuits, 70 g unsalted butter, 1 1/2 nature yoghurt, 3 philadelphia cream cheese (600g), 7 tbsp icing sugar, lemon curd, 1-2 lemons, 1 tsp vanilla essence
Crush your chocolate biscuits and melt the butter. Combine them together, fill them into your cake tin and flatten the biscuit mix down. Put your cake tin to the side or like me put it in the freezer to allow the base for our lemon cheese cake to set.
For this part you best use a cooking aid. Put your creame cheese, icing sugar, nature yoghurt and vanilla extract in a bowl and mix thoroughly. When you have an airy/ fluffy mixture it’s time to add the lemons. Now it all depends on how much you like your cheese cake to taste off lemons. I went with the zest of 1 1/2 lemons and added about 5-6 tbsp of my lemon curd. (If you like a strong lemon flavor but it might be to sour for you just add some more icing sugar to sweeten the mixture.) To give my cake something extra I added mint green food colouring.
Take your cake tin and layer the cheese cake mixture on top of your chocolate biscuit base. Smooth it all out. Now again if you want you can leave it just as it is and put it in the fridge for at least 4 hours to let it set. I got out my lemon curd, added violette food colouring and decorated the cake with it. Draw some straight lines (horizontal), then drag a toothpick through (vertical) to “combine” the lines.
After your lemon cheese cake had it’s 4 hour or over night rest, take it out the cake tin and get it ready to be served. I sliced up some squares and placed some raspberries (my favorites) around the cheese cake to make it look even prettier.
Everybody loved this lemon cheese cake specially my dad since I did it at his request. But seriously try it out. Lemons are great but even better if you combine them with a delicious pudding!
