You might think right now: What have you just read there! Yes, today I show you how to make Marshmallow Cheesecake Cupcakes. It basically is a Cheesecake divided into small cupcake tins and toped off with grilled marshmallows. This recipe is from my Jamie Oliver Cook Book.
The cupcakes
So I changed the recipe from 12 to 8 people since I didn’t want to make a huge badge off cake mixture. The Cheesecake sounds so nice. It’s a vanilla cheesecake with raspberries toped with melted marshmallows. Yummy.
For 12 people: 175 g butter (unsalted), 250 g chocolate biscuits, 100 g Hobnobs, 2 vanilla beans, 3 tbsp starch, 900 g philadelhia cheese, 125 g sour cream & 2 large eggs
First off you start with your biscuit base. Crumble all the biscuits. Melt the butter in a pan and then add the crumbs to it. Stir everything together. Then you divide the biscuit base into your cupcake tins and press the crumbs firmly down.
Now you move on to the cake mixture. Add everything except the eggs. Mix it well together. Slowly add the eggs one by one to the cheesecake mix and stir until you have a smooth and well combined cupcake filling. Put it in the oven for 40 min 170°C.
To go with your Marshmallow Cheesecake Cupcakes I prepared a raspberry sauce.
250 g raspberries, 40 g icing sugar, a lemon & 1 tsp balsamic vinigar
Mix all the ingredients together until you have a sause. You might need to add some more lemon or sugar the raspberry sauce. Just go along with how you like your sauce. For that extra smooth sauce you can also strain it to get rid of the seeds.
Klarstein Kitchen Aid
Whilst the cupcakes are in the oven, I want to talk to you about my little kitchen helper. Today I used my birthday present from my parents for the first time. I was so excited to start baking again with the help of a kitchen aid. Mine is from Klarstein and it’s the KLARSTEIN CARINA MORENA SET 800W. I am so impressed with it, for a little price you get a lot of power and the design is just stunning. Just can’t complain about anything, it just works great! I went with the cream colour and am so happy about it. It gives the kitchen aid a timeless touch.
The results
Finishing off the cupcakes now with the marshmallows. Get some marshmallows and tear them up. Place them in each cupcake tin and get grill them in the oven for about 3-5 min. Have a close eye on them so the marshmallows won’t burn!
I love how they turned out! It was my first time trying a baked cheesecake and also putting it into cupcake forms. And they just look adorable. Take the Marshmallow Cheesecake out of the cupcake tin and drizzle it with a little bit of the raspberry sauce. Viola, it’s ready to eat!
