Who doesn’t love chocolate? Some days ago I decided to do the Malteser cupcakes. Again, the recipe is from Cupcake Jemma.
You need for 12 cupcakes:
5g cocoa powder
25g Ovaltine (Malted milk drink powder)
95g Self-raising flour
125g caster sugar
1/4 tsp bicarbonate of soda
Pinch of salt
135g unsalted butter, softened
2 large free-range eggs
1/4 tsp vanilla extract
1 1/2 tbsp whole milk
Take all the dry ingredients. Sift them into a bowl, add the eggs and start mixing them together. Once they’re nicely combined add the vanilla extract and the milk. Whisk again for about 30 secs to a minute until you have a fluffy cupcake mixtures. Get your cupcake tray and fill the forms up to about 2/3. Bake them at 170°C for about 22 min.
For the buttercream:
200g unsalted butter, softened
450g icing sugar, sifted
4 tbsp whole milk
1/4 tsp vanilla extract
100g crushed Maltesers
Extra Maltesers for the top
Before you do anything crush your Maltesers into small pieces. You can use a food processor, I used a ziplock bag and a rolling pin. Start by whisking the butter until its coloure is a light yellow or almost white. Add the icing sugar in two batches. Mix until everything is combined, fluffy and creamy. Now turn the mixer to a low speed, add the vanilla extract and start pouring in the milk. At last add the crushed Maltesers. Whisk again until everything is combined. Now you should have a fluffy buttercream, ready to be piped.
Once your cupcakes are fully cooled, pipe the buttercream on and decorate with another few Malteseres. And there you have your delicious Malteser cupcakes!! Thanks for stopping by, feel free to share the post if you liked it or leave a comment down below. xx
