It has been too long since I did some cupcakes on the blog and what better way to come back with a bang. Get ready for some awesome Rainbow Cupcakes!
Making the Rainbow Cupcakes
Here’s what you need for 12 cupcakes: 150 g unsalted butter (soft), 150 g caster sugar, 3 eggs, 150 g flour, 1 tsp baking soda, 1 tsp vanilla essence & food colouring.
Start of by mixing the butter and the caster sugar together. Add the eggs until you have a fluffy light yellow cupcake mix. Fold in the flour, baking soda and vanilla essence. And that’s your rainbow cupcake mix done, well nearly.
Divide the mixture into 5 bowls or how many colours you wanna use. I went with yellow, green, violet, blue and red. After you have your coloured badges, fill your cupcake tins. I just dropped a little bit of each colour in the cupcake tin, piece by piece, and let it do it’s thing. At last bake the rainbow cupcakes on 180 ° C for about 20-25 min.
The filling and cupcake icing
Now if you wanna add little something to your cupcakes why not do a filling. I mashed up some raspberries to put them in the middle of my cupcakes. How I did this? I poked a hole into the middle of the cupcakes with a straw then I filled them with the raspberry mash.
For the icing I went with a swiss meringue icing (here‘s how it’s done) for the ones who prefer doing a butter cream icing, here’s the instructions: whip up 100 g unsalted butter until it is nearly white. Now add 200 g of icing sugar. Do this in stages as you’ll otherwise end up with a cloud if icing sugar going all over your kitchen. Once all of the icing sugar is in keep on mixing util everything is smooth and holds it shape. Flour it with some more vanilla essence and you’re ready to pipe it on.
When you filled your Rainbow Cupcakes it’s time to decorate them. Pipe on the icing and use some fancy sprinkles. Now you can sit down and enjoy them!
Well those cupcakes turned out exactly like I imagined they would. The raspberries in the middle give this sweet cupcake a little kick and is a cute surprise for your guest. As for the Rainbow Cupcakes they go well with a party, for a nice afternoon tea or just when ever you like indulging in some sweet delights.

I’ve always wanted to make one of these and on the next birthday celebration will have to take the time to do this, they come out so well! I wonder if it’s possible to create a rainbow marbled effect. Yours look so good. 🙂
