I wanted to do Red Velvet cupcakes for ages and I finally baked them. They might not look as red as I wanted them but never the less they tasted delicious!
You need for 12 cupcakes:
115 g flour , 8 g cocoa powder, 125 g caster sugar, pinch of salt, 235 g soft unsalted butter, 2 large free range eggs, 2 tbs milk, 1 tsp red food colour paste, 1 tsp vanilla extract, 3/4 tsp vinegar
Make a cake mixture by adding the butter and the sugar. Whisk until they’re fully combined. Add the eggs. Then move on to the flour, baking powder, salt and cocoa. Pour them in to your bowl of sugar/butter mix and give it all a whisk. At last add the red food coloring, vinegar, milk and vanilla extract. Mix everything well until there are no lumps and you should be left with an airy cake mix. Fill it into your cupcake tray and bake it in the oven on 180° C for about 15-20 min.
Now on to our cream cheese icing:
75 g soft unsalted butter, 120 g cream cheese, 420 g icing sugar
Whisk the butter and cream cheese up. When it’s a light white colour add the icing sugar and mix well.
Now you just need to wait to take your cupcakes out of the oven and let them cool down. Then you can decorate them with our cream cheese icing and tada you’re done.
The red food colouring disappeared during the baking process completely so I guess I have to invest in some new red food colour paste. Oh well they look pretty to me and the little hearts make up for the lack of red.
