How cute are these? My Unicorn Cupcakes definitely were a firm favourite at my housewarming party. So why not share them all with you since they were easy to make and super yummy to eat.
Here’s what you need for 12 Unicorn cupcakes: 150 g unsalted butter (soft), 150 g caster sugar, 3 eggs, 150 g flour, 1 tsp baking soda, 1 tsp vanilla essence and 3 bars of Kinder Country.
Start off by mixing the butter and the caster sugar together. Add the eggs until you have a fluffy light yellow cupcake mix. Fold in the flour, baking soda and vanilla essence. Chop the Kinder Country into small pieces and add them to the Unicorn Cupcake batter. If you wanna be extra fancy you can also add some food colouring. I didn’t but in hindsight, I should definitely have – pink Unicorn Cupcake batter doesn’t that sound good?
At last bake the Unicorn cupcakes at 180 ° C for about 20-25 min.
Unicorn Cupcake Icing
As always I start with 110 g of unsalted butter. Whisk it up until it is smooth and has an almost white colour. Then add 220 g of icing sugar bit by bit and mix it really well. When everything is well combined, whisk it for another 5 min. Then it’s time to add some of that Unicorn colour. Divide the icing into three bowls add yellow food colouring to one of them, blue to another and pink to the last one. You can make the colour as vibrant as you like. I went for a more pastel look.
To get all the icing into one piping bag I used some sellotape where I spread all three coloured icing onto it like in the picture down below. Then I folded the sellotape into a sausage. Now you can put the icing sausage into your piping bag and start decorating your cupcakes (make sure they are cold otherwise the icing will melt).
Didn’t they turn out really cute? I used a star nozzle and decorated my Unicorn Cupcakes with roses and swirls. The baby blue, pale yellow and pastel pink make everything look so pretty. I imagine those Unicorn Cupcakes would make everybody happy and you can serve them all year around.
